PAT’S APPLE,CINNAMON,BLUEBERRY OATBRAN/OAT CAKES

Ingredients
  • 160 grams oatbran or Oats ( I used Oatbran )
  • 160 to 180 gms homemade apple sauce ( peel,core and chop a medium cooking apple add 3 dessert spoons water and microwave for 4 minutes and mash )
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 3 dessert spoons granulated sweetener (or 55 gms Sukrin gold I used this for these)
  • 100 gms fat free Natural Greek yogurt
  • 2 large eggs
  • 50 mls BOB or skimmed milk
  • 32 fresh or frozen blueberries
Steps
  1. Make the apple sauce first for it to cool, Add the sweetener, baking powder and cinnamon to the oats and stir through with a fork, beat the eggs add the yogurt a bit at a time until you have a smooth mix add the milk then the apple sauce stir well, add this to the oat mix and combine.  Spray a large 12 muffin cake pan and add the mix into 8 if the cups push 4 blueberries into each muffin (I mixed them in and they sunk to the bottom ) bake in the centre of an oven at 190 degrees for 20 to 25 minutes or until a cocktail stick comes out clean
