High Protein Lentil Soup
Ingredients
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 1 medium carrot, diced
  • 2 to 3 celery stalks, diced
  • ½ teaspoon salt
  • 2 large garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 tablespoon tomato paste
  • 2 cans (14 oz / 400 g) crushed tomatoes
  • 1 ½ cup ( 300 g) green lentils
  • 4 cups ( 1000 ml) vegetable stock
  • 2 cups ( 50 g) Tuscan kale, shredded
  • 2 tablespoons flax seed
  • Salt and freshly ground black pepper to taste
