  • 2 cups no-salt-added or low sodium vegetable broth
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 1 zucchini, chopped
  • 1 sweet potato, peeled and chopped
  • ¼ cup unrefined barley
  • 6 tomatoes, chopped
  • ⅓ cup unsulfured, no-salt-added sun-dried tomatoes, soaked in warm water to cover for 30 minutes, then finely chopped
  • 8 ounces shiitake, oyster, or cremini mushrooms, stems removed and chopped
