Orzo and rice pilaf

  • ¼ pound sliced fresh mushrooms
  • ½ small onion, finely chopped
  • 2 tablespoons olive oil
  • 2 T Butter
  • 1 garlic cloves, minced
  • 1 cup chicken broth
  • ½ cup uncooked orzo pasta
  • ½ cup long grain rice
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 tablespoons minced fresh parsley, romano cheese
  • grated on top

Steps
  1. •    In a large saucepan, saute orzo in butter and oil until golden add mushrooms and onion, rice, and saute until soft and tender.
  2. •    Add garlic; cook and stir 1 minute longer. Add the broth,  salt and pepper. Bring to a boil. Reduce heat; cover and simmer for or (Cover and bake at 350°F until the rice is tender and the stock is absorbed, about 25 minutes.)
  3. •    Stir in parsley, and cheese if desired and serve, if you prefer a drier orzo, microwave covered with a paper towel 3 to 5 minutes.  Stir in parsley, and cheese if desired and serve.
