Cottage Cheese and Coconut Pancakes

Ingredients
  • ½ C reduced-fat cottage cheese
  • 4 eggs
  • 1 tsp vanilla
  • 2 tsp honey
  • 1 tsp cinnamon
  • 2 T shredded coconut
  • ½ cup oat flour
  • ½ tsp baking soda
  • 1 tsp shredded coconut for garnish
Steps
  1. Blend cottage cheese, eggs, vanilla, and honey until smooth.
  2. Add flour and baking soda and blend again until combined. Let sit for 5 minutes.
  3. Heat skillet over medium to high heat and spray lightly with cooking oil.
  4. Cook until browned on both sides. Enjoy!
