Eggplant with Garlic Sauce (Yuxiang Eggplant) (魚香茄子)
Ingredients

  • 22oz Chinese eggplant (western eggplants work too, with some modifications)
  • 2oz fresh shiitake mushrooms (dried also works)
  • 4 mini sweet peppers
  • 5clove garlic
  • 0.50oz ginger
  • 3piece scallions
  • 5 dried red chilies (adjust to your liking)
  • 2tsp corn oil
  • Yuxiang Sauce
  • 2tbsp light soy sauce ( Amazon)
  • 1tbsp dark soy sauce (can substitute with Tamari - Amazon )
  • 2tbsp oyster sauce ( Amazon )
  • 2tbsp vinegar
  • 3tbsp brown sugar
  • 0.50tbsp ground bean sauce
  • 2tsp cornstarch
  • 1tbsp Shaoxing cooking wine (optional)
  • 4tbsp water
  • 1tsp sesame oil (add at the very end)
