½ yellow bell pepper

1 medium carrot

½ small red onion

2 cloves garlic , minced

2 tablespoons olive oil

Salt & pepper to taste

1 tablespoon lemon juice (from ½ of a lemon)

1 tablespoon fresh parsley leaves chopped
