Chicken & Cheddar Biscuit Casserole
This is the full sized batch, for a 9x13 baking dish.
Ingredients
  • ⅓ cup butter, cubed
  • 1 large onion, chopped
  • 2 celery ribs, chopped
  • 2 medium carrots, chopped
  • 2 garlic cloves, minced
  • ½ cup all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 4 cups chicken broth or stock
  • Optional: 1 cup of corn, peas, string beans or other chopped vegetables
  • 5 cups cubed cooked chicken
  • subheading: BISCUIT TOPPING:
  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 2 teaspoons sugar
  • ½ teaspoon salt
  • ½ teaspoon cream of tartar
  • ½ cup cold butter, cubed
  • ⅔ cup 2% milk
  • 1 cup shredded cheddar cheese
  • 1 cup roasted sweet red peppers, drained and chopped
