Stir-Fried Cucumber with Tofu
Ingredients
  • subheading: For the Stir-fry:
  • 2 large cucumbers (about 1½ pounds), peeled in alternating vertical stripes, seeded, then cut on the bias ¼-inch thick
  • - I added red peppers slivers and onion - would be good with carrot and green bean too
  • Kosher salt
  • 3 tablespoons vegetable oil
  • 1 (14-ounce) package extra-firm tofu, crumbled and sprinkled with corn starch
  • 3 garlic clove, finely chopped
  • Finely chopped scallions, toasted white sesame seeds and steamed rice, for serving (optional)
  • Freshly ground white pepper

  • subheading: For the Sauce:
  • 2 tablespoons tamari (and a bit of soy sauce)
  • 2 tablespoons rice vinegar (used white wine vinegar)
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch
  • ½ teaspoon Sichuan chile flakes (used sambal)
