Ingredients
  • Spring Rolls
  • boiled shrimp (or protein of your choice) (or make them vegetarian)
  • 1package rice wrapper
  • cucumbers
  • carrots
  • green onions
  • avocado
  • water chestnuts
  • fresh cilantro, basil, mint
  • rice vermicelli noodles (thin)
  •  
  • Peanut sauce
  • peanut butter
  • rice wine vinegar
  • miso
  • soy sauce
  • honey
  • chile sauce
  • coconut milk
Steps
  1. Make peanut sauce. Put peanut butter in a small sauce pan and season to taste with the other ingredients. Thin with coconut milk.
  2. Assemble all ingredients. Slice shrimp lengthwise. Carrots and cucumbers should be julienned; chop or mince everything else. Have a small dish with a little oil nearby.
  3. Put vermicelli in boiling water for a few minutes; when tender, remove but save water
  4. subheading: Assembly:
  5. Place one wrapper in warm water for about ten seconds
  6. Lift from water and place on waxed paper
  7. Put ingredients on the wrapper about a third of the way up. I put shrimp on the outside so they show. Order: Shrimp, cilantro, cukes and carrots, herbs, avocado, onion and chestnuts sprinkled. A few blobs of peanut sauce. Vermicelli.
  8. Do not overfill. They will tear if you try to add too much filling.
  9. Pick up the bottom edge of the wrapper and pull up over the filling. Fold each side over this and roll the whole thing upwards until it is a spring roll shape
  10. If the wrapper sticks, pull up the waxed paper so you can peel it away more easily. Put a little oil on your fingers or under the bottom edge of the wrappers if they are sticking or tearing. If it isn’t working, you may be leaving them in the water for too long. Often the first one doesn’t work out. Don’t get frustrated. This is doable. Just assume it will work and don’t overfill the wrappers.
  11. Use the rest of he peanut sauce as a dipping sauce.
Notes
  • Any filling can be added. Try it with pickled carrots and daikon; add chilies, sriracha, shredded pork. Chop up all ingredients.
