Miến Gà Instant Pot (Vietnamese Chicken Glass Noodle Soup)
Ingredients
  • subheading: For 8-quart IP:
  • 1 chicken (about 4 to 5 lbs)
  • 1 large onion
  • 2 large ginger knobs (peeled, sliced lengthy)
  • about 2 pieces thumb size rock sugar
  • 2 dozens dried Shiitake mushrooms (soaked in warm sink water for 2 to 4 hours, rinsed multiple times; used a scissor to trim off the stems)
  • 7 tbsp of Quốc Việt Chicken Soup Base*
  • mushroom seasoning, sugar and/or salt to taste
  • subheading: Garnishes and others:
  • ½ green cabbage (optional for presentation, finely sliced)
  • onion and cilantro (chopped)
  • Vietnamese corriander/rau răm (chopped)
  • bean sprout
  • lime wedges
  • sliced jalapeno pepper/Thai red chili
  • fried shallot
  • ground pepper
  • Cellophane noodles/Glass noodles/Mung Bean noodles (Miến)
  • Ginger Fish Sauce for dipping (add more or less of each ingredient below to your taste)
  • 4 tbsp of fish sauce
  • 3 tbsp of sugar
  • ½ to 1 tbsp of lime juice
  • 5 cloves of garlic and ½ a knob of ginger (crushed both together with a mortar and pestle)
  • chopped fresh Thai pepper
