"Buttermilk" Donuts Thm-E, Low Fat, Dairy and Gluten Free!
Ingredients
  • Donut pan (my donut pan makes donuts that are 3.5 inches in diameter)
  • ⅓ cup unsweetened almond or cashew milk mixed with 1 tsp. white vinegar (if you are doubling the recipe like I often do, only double the nut milk, and keep the vinegar at 1 tsp.) This is your "buttermilk".
  • 2 egg whites (¼ cup)
  • 1 Tbsp. unsweetened applesauce
  • ½ tsp. vanilla
  • 1 and ⅓ cups oat flour (ground rolled oats)
  • ⅓ cup THM Gentle Sweet (orequivalent sweetener)
  • ¼ tsp. plus another ⅛ tsp. Nutmeg
  • ⅛ tsp. Xanthan Gum
  • ½ Tbsp. Baking Powder
  • ½ tsp. salt
  • subheading: Topping:
  • 1 Tbsp. butter, melted
  • 1 and ¾ tsp. granulated THM approved sweetener, such as Pyure
  • ⅛ tsp. cinnamon
