Ground Beef Zucchini Bake

Ingredients
  • 1 lb ground beef
  • ¼ c onion, chopped
  • 2 c Monterey Jack cheese, shredded
  • 1 (7oz) can diced green chilies, drained
  • 3 c cooked rice (not Minute Rice)
  • 3 medium zucchini, thinly sliced
  • ¼ t garlic powder
  • 2 t chili powder
  • 1 c sour cream
  • 2 to 3 tomatoes, sliced or can of sliced tomatoes
Steps
  1. Saute beef, zucchini, onions, and spices together until meat is no longer pink and veggies are tender crisp.
  2. Add sour cream, chilies, 1 cup of shredded cheese, and rice.
  3. Pour into 2 quart greased casserole and top with sliced tomato.
  4. Sprinkle with remaining cheese.
  5. Bake at 350* for 20 to 25 minutes.

  • Reheats well!
