Awful Waffles
A family favorite (when the kids were small they had trouble with the 'W' in 'Waffles', hence the name), these waffles were a standard for the breakfasts we served in our B&B for 18 years.

Servings: 8 Belgian waffles

Ingredients
  • 2 egg yolks
  • 2 C. Milk
  • 2 C. Flour
  • 1 tbsp. Baking Powder
  • ½ tsp. Salt
  • ⅓ C. Oil
  • 2 egg whites, stiffly beaten
Steps
  1. Preheat waffle maker. Put all ingredients except egg whites in a large mixer bowl. Beat on low until moistened. Increase to medium, mix until smooth.
  2. With beater on lowest speed, gently fold in egg whites. Fill grids with batter. Close waffle maker, bake until golden, about 2 to 2-½ minutes. Repeat. Serve hot with your favorite topping.
  3. Yield: About 5 Belgian waffles
Notes
  • Buckwheat is a gluten free alternative, but need just a bit less flour- 1 ¾ cups buckwheat flour works well. The texture improves if the milk is diluted- add ½ cup water to 1 ½ cups milk (you can use almond or soy milk straight as a lactose free alternative.)
