Tzimmes with Dates, Pomegranate, and Mint
Ingredients
  • 1¾ pounds (10 medium) carrots, peeled and cut into 1-inch pieces on a bias
  • 6 medium-sized dates, pitted and roughly chopped (¼ cup chopped)
  • One 1-inch piece ginger, peeled and minced
  • 2 tablespoons coconut oil, melted
  • ½ teaspoon ground cumin
  • ½ teaspoon ground cardamom
  • 2 tablespoons chopped fresh mint
  • 1 tablespoon honey
  • 1 tablespoon pomegranate molasses (preferably Al wadi)
  • 1 tablespoon freshly squeezed orange juice
  • Kosher salt and freshly ground black pepper, to taste
