Ingredients
  • 2.5 L store-bought stock
  •  
  • 4.2 oz Red wine (low tannin red like Syrah or Ruby Port)
  •  
  • 0.7 oz Glucose syrup, optional
  •  
  • 0.28 oz Salt, kosher
  •  
  • 0.08 oz MSG, optional
Steps
  1. In a medium pot, reduce wine until syrupy.
  2. Add remaining ingredients; stir to combine
  3. Over medium-high heat, reduce by 85 percent. Skim foam occasionally.
