Rice and Beans with Coconut Milk (Resanbinsi)
Ingredients
  • ⅛ cup canola oil
  • 3 cloves garlic, minced
  • 1 small onion, minced
  • 1 rib celery, minced
  • 1⁄2 small red bell pepper, minced
  • 1 ¼ cups long-grain white rice
  • 1  tsp. ground cumin
  • 1 tsp. freshly ground black pepper
  • ½ tsp. sugar
  • 1 can coconut milk
  • 1 cup broth
  • 1 (15-oz.) cans black bean.  Keep the water when draining
  • 2 sprigs cilantro, chopped
  • Kosher salt, to taste
