Finger Jello Recipe

I love cooking but often don't have much time so the recipes I select or adapt are fairly quick and easy. We eat mostly vegetarian and are always looking for new ways to use the veggies that grow in our garden or show up in our CSA bin. My kids mostly eat "deconstructed" versions of our food (I keep some key components out for their more plain meal).

Servings: one 8x8 pan

2 (¼-oz. or 1 Tbsp.) packages unflavored gelatin

1 (6 ounce) package Jello gelatin

2½ cups water

Set out a 8 x 8 square pan.

In a large bowl, combine the dry jello and unflavored gelatin powders - this is important to do, because it prevents the unflavored gelatin from clumping when the boiling water is added.

Heat water until boiling. Carefully pour boiling water into bowl with powder and stir 2 to 3 minutes to dissolve.

Pour into square pan. Place in refrigerator at least 3 hours or until set.

Cut into squares and serve. Store leftovers in fridge.

Repeat steps with other flavors to layer if desired (may need a larger 9x13 pan)
