Matsutake Gohan (Wild Pine Mushroom Rice) 松茸ご飯
Ingredients
  • 3 rice cooker cups uncooked Japanese short-grain rice
  • 4 to 7 oz Matsutake mushrooms (110 to 200 g; I used 7 oz today) - MY> Two handfuls? enough to cover rice by 1 inch
  • 2 ½ cup dashi (Japanese soup stock; click to learn more) (600 ml) (use kombu dashi for vegetarian)
  • Mitsuba (Japanese parsley) (to garnish)

  • 3 Tbsp soy sauce
  • 2 Tbsp mirin
  • 1 Tbsp sake
