Ingredients
  • 8 to 10 boneless chicken thighs, trimmed of fat (remove skin for less rich dish)
  • 1 bottle full-bodied red wine, such as Cabernet Sauvignon
  • Coarse salt and freshly ground pepper
  • 4 slices slab bacon, cut into ½-inch dice
  • 3 tablespoons extra-virgin olive oil, if needed
  • 1 medium onion, finely chopped
  • 10 garlic cloves, thinly sliced
  • ½ pound small mushrooms
  • ¼ cup all-purpose flour
  • ½ can (3 oz) tomato paste
  • 1 bay leaf
  • 1 tsp thyme
  • opt but good: small package of pearl onions, blanched and peeled
