It's a Variation On a Dish from "Supermarket Vegan", a Cookbook I Referenced a Few Days Ago. Here's My Modified Version:
Ingredients
  • Southwest-style Lasagna
  •  
  • Whole-grain corn tortillas (about 8 to 12, depending on size)
  • Pint bottle of jarred salsa, of preferred heat (we use Herdez mild because it suits the children)
  • 15 oz can of fat-free refried beans
  • 15 oz can of white hominy, rinsed and drained
  • 1 cup frozen sweet corn kernels, thawed
  • 4 green onions, green and white parts, sliced small
  • ΒΌ cup minced fresh cilantro
