Crockpot Teriyaki Chicken over Quinoa Pilaf
Ingredients
  • 1 ½ cups bottled teriyaki sauce
  • 2 to 3 boneless, skinless chicken breasts {about 1.5 pounds}
  • 1 cup diced red bell pepper
  • ½ red onion, diced
  • 1 20-oz. can pineapple chunks
  • salt & pepper, to taste
  • subheading: FOR THE QUINOA:
  • 1 tablespoon butter
  • ½ cup finely diced yellow onion
  • 1 cup quinoa
  • 2 cups chicken stock
  • salt, to taste
  • cilantro and sesame seeds for garnish, if desired
