Swiss Chard Lentil Stew
Ingredients
  • 1 pound Swiss or rainbow chard
  • 2 cups water
  • 1 cup fresh, mild, no-salt-added salsa
  • ½ teaspoon cumin seeds
  • ¼ teaspoon turmeric
  • 1 teaspoon coriander powder
  • 1 cup red lentils, soaked for 30 minutes
  • 1 ½ cups diced tomatoes
  • 8 ounces no-salt-added tomato sauce or 6 ounces tomato puree for a thicker stew (see note)
