Ingredients
  • Olive oil, as needed
  • 2 medium yellow onions, chopped
  • 3 ribs celery, chopped
  • 2 carrots, chopped
  • 3 to 4 cloves garlic, minced
  • 1 Tbsp ground turmeric
  • 3 lbs (6 to 7 medium large) Yukon Gold potatoes, peeled and cubed in about 1” pieces
  • 8 cups water or chicken stock (if using water you can add a vegetarian bouillon cube)
  • Juice of 1 large lemon, about ¼ cup, or to taste
  • Salt and pepper, to taste
