Khoai Mì Trộn Dừa (Cassava with Shredded Coconut)
Ingredients
  • 2 lbs of frozen Cassava* (if use fresh, peel outer skin, cut into large 3 inches chunks, and soak in salt water to prevent it from turning brown)
  • ½ bag of frozen scraped coconut (I used half a bag, so about 4 to 5 oz, but use more or less to your preference)
  • 1 can of coco Rico Soda (can substitute for coconut water)
  • 2 cups of water or more to cover  cassava
  • salt
  • sugar
  • Sweet and Salty Sesame Peanut Topping/Muối Mè (mix more or less of each, cater to your taste)
  • 2 tbsp of roasted peanuts (lightly crushed)
  • 1 tsp of white sesame (toast on a hot pan, constantly stir until lightly brown, allow it to cool then press lightly to release flavor)
  • 2 tbsp of sugar
  • ½ to 1 tsp of salt
