Ingredients
  • 300 g sushi rice
  • 390 g boiling water
  • 50 g water
  • 50 g rice vinegar
  • 25 g (2T) sugar
  • 6 g (2t) kosher salt
Steps
  1. Pre-heat oven to 375
  2. Rinse rice until clear. Once clear let rice drain in a fine sieve for 5 min
  3. Add rice to 8x8 Pyrex dish and add the boiling water
  4. Cover dish tightly with heavy duty aluminum foil
  5. Cook undisturbed for 20 min. Remove from oven and let rest for another 20 min.
  6. While rice is cooking make vinegar mixture by heating the vinegar, sugar and salt until dissolved
  7. Put the rice out into a large bowl to cool. After a few minutes cut the vinegar mixture into the rice using a bamboo scraper.
  8. Cover with a moist towel and use within a few hours. DO NOT REFRIGERATE.
