Ingredients
- 300 g sushi rice
- 390 g boiling water
- 50 g water
- 50 g rice vinegar
- 25 g (2T) sugar
- 6 g (2t) kosher salt
Steps
- Pre-heat oven to 375
- Rinse rice until clear. Once clear let rice drain in a fine sieve for 5 min
- Add rice to 8x8 Pyrex dish and add the boiling water
- Cover dish tightly with heavy duty aluminum foil
- Cook undisturbed for 20 min. Remove from oven and let rest for another 20 min.
- While rice is cooking make vinegar mixture by heating the vinegar, sugar and salt until dissolved
- Put the rice out into a large bowl to cool. After a few minutes cut the vinegar mixture into the rice using a bamboo scraper.
- Cover with a moist towel and use within a few hours. DO NOT REFRIGERATE.
