  • 1 tsp white wine vinegar
  • 1 tsp cornflour, sifted
  • 1 tsp vanilla-bean extract
  • 1 mango, thinly sliced
  • Mulberries, to serve

  • 100g unsalted butter, chopped
  • 1 cup (220g) caster sugar
  • ½ cup (125ml) lemon juice
  • 2 eggs, lightly beaten
  • 1 cup (250ml) thickened cream, whipped to stiff peaks
