Spicy, chunky, classic chili
Ingredients
  • 3 tablespoons vegetable oil
  • 2 medium yellow onions, medium dice
  • 1 medium red bell pepper, medium dice
  • 6 medium garlic cloves, finely chopped
  • ¼ cup chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon cayenne pepper (addind more or less to change spice level)
  • 2 pounds lean ground beef (chili beef from kroger works well)
  • 1 ½ teaspoons kosher salt, plus more as needed
  • 1 (28-ounce) can diced tomatoes
  • 1 (14-ounce) can tomato sauce
  • 2 (15-ounce) cans kidney beans, drained and rinsed
  • ½ cup coarsely chopped pickled jalapeños (doubled from original ¼)
  • Shredded cheddar cheese
  • Fritos
