Black Bean & Pepper Jack Stuffed Poblano Peppers
Ingredients

  • 1 ½ cups shredded jalapeño jack cheese, divided
  • 1 cup vegetable broth
  • ¾ cup cornmeal
  • ½ cup finely chopped red onion
  • 1 teaspoon ground coriander
  • ½ teaspoon ground cumin
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 4 medium poblano chile peppers, stemmed, halved and seeded
  • Cilantro, sliced green onions, and pickled peppers for garnish (optional)
