Rice Salad with Crunchy Noodles
Ingredients
  • 1 Tbsp butter
  • 1 Tbsp olive oil
  • 1 onion, finely chopped
  • 1 clove garlic, crushed
  • 1½ cups basmati rice
  • Finely grated zest of 1 lime
  • 3 cups chicken stock
  • 2 tsp sesame oil
  • 2 Tbsp light soy sauce
  • 3 spring onions, thinly sliced
  • 100g snow peas, thinly sliced diagonally
  • 100g packet Chang’s Original Fried Noodles
  • ¼ cup coriander leaves
  • 1 red chilli, sliced, to serve
