Zucchini and Sundried Tomato Savory Muffins

  • 1 dose Vegan Mascarpone * 150g
  • 100 g ( 0.8 cups) Zucchini 1 small
  • 125 g ( 1 cups) All purpose Flour
  • 100 g ( 0.4 cups) Plant Milk Soy
  • 40 g ( 1.41 oz) Vegetable Oil Sunflower
  • 1 tbsp Chickpea Flour or Potato Starch 13 to 15g
  • ½ tbsp ( 0.5 tbsp) Vinegar Apple Cider
  • ½ tsp ( 0.5 tsp) Soda Bicarbonate 3g
  • 30 gr ( 4 tbsp) Vegan Grated Cheese
  • 30 g ( 1 oz) Sundried Tomatoes dried or 50 g oil preserved - squeezed well
  • ¼ tsp ( 0.25 tsp) Oregano
  • ¼ tsp ( 0.25 tsp) Garlic Granules
  • ½ tsp ( 0.5 tsp) Salt
  • ½ tsp ( 0.5 tsp) Pepper
  • 6 muffins
