Calabrese-Style Tomato with Ginger Pasta

Ingredients
  • 3 TBSP olive oil
  • 2 medium garlic cloves finely chopped
  • 1 small onion, finely chopped
  • 2 tsp fresh ginger, finely chopped
  • 1 28 ounce can whole tomatoes
  • 1 TBSP double-concentrate tomato paste
  • 2 tsp sugar
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ¾ tsp salt
  • ½ tsp ground pepper
Steps
  1. in a medium skillet heat the oil over moderate heat
  2. add the garlic, onion, and ginger & saute until tender (2 to 3 min)
  3. add the tomatoes breaking them apart with your hands
  4. stir in remaining ingredients
  5. raise the heat slightly and simmer the sauce until thick (about 15 min)
  6. pour over cooked pasta
