Fish Lolo

Ingredients
  • subheading: Coconut milk (or use store bought canned milk):
  • 1 Coconut
  • 4 cups water
  •  
  • subheading: Fish:
  • 1 Whole fish ( Snapper, Mahi, Kingfish)
  •  
  • subheading: Vegetables:
  • 1 Red bell pepper
  • 1 Green bell pepper
  • 1 Onion
  • 3 Garlic cloves
  • 2 Carrots
  • 1 Chinese cabbage
  • 1 Purple cabbage
  • ½ Chili pepper
  • 1 tablespoon salt
  • ¼ cup chopped cilantro
Steps
  1. subheading: Prepare Fish :
  2. Scale the fish, clean out guts, chop vertically to create about 1inch chunks.
  3. Season with salt.
  4. Add a vegetable oil to a pan and bring up to frying temperature.
  5. Add the fish and fry until golden brown.
  6. Set aside over paper towels to absorb excess oil.
  7. subheading: Making Coconut Milk:
  8. Remove the coconut husk with a large knife to expose the core . Once you crack it we need to remove and shred the white coconut meat.
  9. Once the coconut meat is shredded pound it down. Next we add boiling water and let it sit for 10 mins.
  10. Strain the coconut milk to remove the meat leaving behind silky milk.
  11. subheading: Prepare vegetables:
  12. Chop Chinese cabbage, purple cabbage, carrots, green pepper, red pepper.
  13. Boil or steam the chopped Chinese cabbage, purple cabbage, carrots, green pepper, red pepper until tender.
  14. While thats cooking mince garlic, fine chop cilantro, tomatoes, onion and chili.
  15. subheading: Combine and Mix:
  16. Add the raw vegetables and the cooked vegetables into the coconut milk. Add fish.
  17. Now that everything is mixed together just pour over a bowl of rice and enjoy!
