Peanut Butter Quinoa Flake Cookies (Vegan, Oil-Free, Gluten-Free, Plant-Based Recipe)
Ingredients
  • Chef's Tip:  Use roasted peanut butter that has no added ingredients.  Check the ingredients list to make sure there's no added oil, sugar, or syrup.
  • Chef's Tip:  The cookies are done when golden-brown on the bottom.  Let them cool  at least 10 minutes on the baking sheet pan before storing storing or serving.  Chewy, delicious peanut butter vegan goodness!
  • 1 cup dates, (200g, 7 oz)
  • 1 medium ripe banana (110g)
  • ¼ cup creamy peanut butter
  • 2 tsp vanilla
  • 1 cup almond meal (sub brown rice)
  • 1 cup quinoa flakes
  • ½ tsp salt
  • 1 tsp baking powder
