Ingredients
  • Tonight I made quiona black bean stuffed peppers. 1 cup quiona, 1.5 cups water. 1 min manual and 10 min NPR. Then I added a pack of taco seasoning, a can of drained/rinsed black beans, a small can of diced green chiles and a small can of diced tomato with the juice. I put that on warm with the lid on while I cut yellow bell peppers in half and broiled each side for a few minutes. Then I filled them with the quiona mixture and topped with go veggie vegan cheese. (Half vegan cheese for me and half regular cheese for my family.) and broiled until the cheese was melted. super delicious!
