Slow Cooker - Beef Roast

Ingredients
  • 4 Lb. Beef, Eye of round roast
  • 2 Sm. Onions, quartered
  • 6 Lg. Potatoes, quartered
  • 2 Lb. New baby carrots
  • 2 Pkg. Lipton beefy onion soup mix
  • 1 C. Hot water
Steps
  1. Dissolve onion soup mix in water. Put half of the vegetables on the bottom of the slow cooker, brown beef and put on top of vegetables, add remaining vegetables and pour beefy onion soup mix over top.
  2. Cook for 8 to 9 hours on low heat. Use drippings to make the gravy.
