Classic Hoppin' John Soup - Brittian likes but sub ground beef for ham (no ham for BV)
Like Newks but without chopped collard greens
Ingredients
  • 1 cup chopped country ham (used 2 cups) Browned ground beef for Brittian
  • 4 celery stalks, sliced (about 1 ½ cups)
  • 1 medium-size yellow onion, chopped (about 1 ½ cups)
  • 1 small bell pepper, finely chopped (about 1 cup)
  • 3 garlic cloves, chopped (about 1 Tbsp.)
  • 2 14 ounce cans diced tomatoes undrained
  • 1 teaspoon chopped fresh thyme
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper
  • 1 ½ teaspoon kosher salt, divided
  • 8 cups lower-sodium chicken broth (NEED MORE - beans/peas soak it up after cooking)
  • 4 cups fresh or frozen black-eyed peas or 3 cans rinsed and draiined
  • 2 tablespoons olive oil
  • 1 ½ cups uncooked rice
  • Fresh scallions, sliced
  • 2 bay leaves
