Ingredients
  • 1 ½ cup almond flour
  • ½ cup confectioners Erythritol (Swerve)
  • 1 tsp baking powder
  • pinch of sea salt
  • 3 ½ oz full fat cream cheese (at room temperature)
  • 4 tbsp coconut oil
  • 4 large eggs
  • 3 tsp lemon extract
  • 1 tsp vanilla extract (no added sugar)
  • 1 tbsp lemon zest (optional for extra lemon flavor)
  • subheading: Glaze:
  • ¼ cup confectioners Erythritol (Swerve)
  • Juice of 2 lemons
  • Bring to the boil to make a syrup and drizzle over cake.
