Ingredients
  • subheading: Muffin:
  • 15 ounces Canned Plain Pumpkin (NOT prepared pumpkin pie filling)
  • 1 box Spice Cake Mix (Duncan Hines Moist Deluxe, preferred)
  • 1⁄ 2 cup Water
  • subheading: Streusal Topping:
  • 1⁄ 2 cup Brown Sugar
  • 1⁄ 2 cup All-Purpose Flour
  • 1⁄ 2 stick Butter, softened
Steps
  1. Preheat oven to 350 degrees F. Grease or spray a 12 cup muffin tin with cooking spray.
  2. In a mixing bowl, combine the pumpkin, dry cake mix and water. Stirring until evenly combined. Divide batter evenly among the prepared muffin cups.
  3. Prepare the streusel topping: Stir together the flour and brown sugar. Cut in the softened butter to form a crumble.
  4. Spoon or sprinkle streusel topping on top of each muffin, patting it down slightly to make sure it sticks.
  5. Bake at 350 degrees F for 20 to 24 minutes or until cooked through.
