ONE-DISH GNOCCHI WITH SAUSAGE, ARTICHOKES AND TOMATOES
Ingredients
  • 1 lb. packaged gnocchi (slightly more)
  • 2.5 pints cherry tomatoes
  • 10 oz bag fresh spinach, chopped
  • ⅔ (of 14.5 oz) jar artichoke hearts, chopped
  • 6 garlic cloves, minced (pressed is fine)
  • ½ cup white wine
  • ½ cup chicken broth
  • 16 oz. hot Italian turkey sausage
  • ¾ cup grated parmesan cheese
Steps
  1. Preheat oven to 350F.
  2. In a baking dish, add gnocchi, tomatoes, spinach, artichokes, and garlic.
  3. Season with salt and pepper.
  4. Add wine and broth.
  5. Spread sausage in an even layer up top.
  6. Cover and cook for 35 minutes.
  7. Stir in parmesan cheese-slightly bursting the tomatoes with the back of a spoon-before serving.
Notes
  • 2.5 x the amount of tomatoes
  • Half of the tomatoes get roasted ahead of time at 400 for 20 minutes, seasoned with olive oil, Italian seasoning, Basil, salt, pepper, ground thyme, ground sage, store in the fridge until ready to use
  • Bake full dish for 50 minutes at 350, then add corn starch slurry
  • Increase the temp to 405 for another 15 minutes
