Low Carb Zucchini Chicken Enchilada Casserole (Paleo, Aip, Whole30)
Ingredients

  • subheading: For the casserole:
  • 1 to 1.5 cups sugar-free enchilada sauce (l ike this, or the recipe below for AIP)
  • 3 to 4 medium zucchinis
  • 1 lb pre-cooked shredded chicken
  • 1 medium avocado, sliced
  • 3 to 4 radishes, sliced
  • ½ red onion, diced
  • 2 tbsp cilantro, chopped
  • 2 tbsp green onion, chopped
  • 1 to 2 limes, quartered
  • ¼ cup coconut cream
  • 1 to 2 tsp apple cider vinegar
  • subheading: For the AIP/ nightshade free enchilada sauce:
  • 2 tbsp avocado oil
  • 1 medium white onion, diced
  • 1 cup nightshade free tomato sauce ( like this)
  • ½ cup chicken broth
  • ¼ cup water
  • 2 tsp garlic powder
  • 2 tsp oregano
  • 2 tsp cilantro
  • 2 to 3 tsp horseradish powder
  • 1 tsp sea salt
