Avocado Fudge Cookies

Servings: 6 to 8 cookies

Ingredients
  • 1 ripe avocado
  • 1 egg
  • ½ cup coconut sugar
  • ½ cup cacao powder
  • ½ tsp baking soda
  • ½ Tbsp vanilla
  • 1 Tbsp water
  • Pinch of sea salt
  • ¾ cup chocolate chips
Steps
  1. Preheat oven to 350 and line a baking sheet with parchment paper
  2. In a food processor, blend avocado, egg and sugar
  3. Add remaining ingredients (except chocolate chips) and blend
  4. Fold in chocolate chips. Scoop out into big spoonful size - about 6 to 8 cookies
  5. Bake for 10 to 12 mins (check after 10). Allow to cool completely.
Notes
  • Store in fridge for up to a week or freezer for longer.
