Make-Ahead Healthy Sausage Breakfast Casserole
Ingredients
  • 7 to 8 slices French bread, cut into 1-inch cubes
  • 1 lb. turkey sausage (hot or mild),, removed from casing, cooked and drained
  • ½ cup chopped broccoli
  • ½ cup chopped Roma tomatoes (1 medium tomato)
  • ½ cup red bell pepper (½ medium pepper)
  • ½ cup chopped button mushrooms
  • 1 cup chopped fresh baby spinach
  • 1 ½ cups shredded sharp cheddar cheese
  • 5 large eggs
  • 2 cups half and half (I use fat-free)
  • 1 teaspoon kosher salt
  • 1 teaspoon dry mustard
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)

  • chopped fresh parsley, sliced green onions, hot sauce
