Ingredients
- subheading: Pumpkin Bars:
- 1 stick of butter (room temp)
- 4 oz cream cheese (room temp)
- 3 cups all purpose flour
- 3 cups sugar
- ½ tsp baking powder
- ½ tsp salt
- ½ tsp pumpkin spice
- 12 oz pureed pumpkin
- 5 large eggs
- subheading: Cream Cheese icing:
- 8 oz butter (room temp)
- 8 oz cream cheese (room temp)
- 4 cups powdered sugar
- 2 tsp vanilla
Steps
- Preheat oven to 350. Grease 13x9 and 9x9 pans
- Mix flour, baking powder, salt, and pumpkin spice in a medium bowl and set aside.
- Using an electric mixer, cream together butter, cream cheese, and sugar on medium speed until fluffy. Add the eggs one at a time, beating well after each addition. With the mixer running on low, add flour mixture followed by the pumpkin puree. Mix on low until combined.
- Pour the batter into pans and bake for approximately 30 minutes. An inserted toothpick should come out clean when done.
- Wait 30 minutes to cool before frosting.
- To make frosting, cream together butter, cream cheese, and vanilla. Slowly add powdered sugar, beat until fluffy.
Notes
- I just use whole 15 oz pureed pumpkin can
- maybe add slightly more pumpkin spice
