Pumpkin Cake Bars

Ingredients
  • subheading: Pumpkin Bars:
  • 1 stick of butter (room temp)
  • 4 oz cream cheese (room temp)
  • 3 cups all purpose flour
  • 3 cups sugar
  • ½ tsp baking powder
  • ½ tsp salt
  • ½ tsp pumpkin spice
  • 12 oz pureed pumpkin
  • 5 large eggs

  • 8 oz butter (room temp)
  • 8 oz cream cheese (room temp)
  • 4 cups powdered sugar
  • 2 tsp vanilla
Steps
  1. Preheat oven to 350.  Grease 13x9 and 9x9 pans
  2. Mix flour, baking powder, salt, and pumpkin spice in a medium bowl and set aside.
  3. Using an electric mixer, cream together butter, cream cheese, and sugar on medium speed until fluffy.  Add the eggs one at a time, beating well after each addition.  With the mixer running on low, add flour mixture followed by the pumpkin puree.  Mix on low until combined.
  4. Pour the batter into pans and bake for approximately 30 minutes.  An inserted toothpick should come out clean when done.
  5. Wait 30 minutes to cool before frosting.
  6. To make frosting, cream together butter, cream cheese, and vanilla.  Slowly add powdered sugar, beat until fluffy.
Notes
  • I just use whole 15 oz pureed pumpkin can
  • maybe add slightly more pumpkin spice
