Chilean Salad
Ingredients
  • 1 onion, sliced thin, Vidalia or sweet variety preferred
  • 3 tomatoes, Creole preferred, sliced or cut as desired
  • 3 tablespoons cilantro leaves, chopped
  • 3 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • salt and fresh cracked black pepper, to taste
Steps
  1. Toss the tomatoes, onion, and cilantro. Briefly whisk the olive oil and lemon juice before drizzling over the tomato mixture. Salt and pepper to taste, and a final stir before serving.
