Cabbage Salad with Mustard-Lime Dressing
Ingredients

  • 4 cups thinly sliced green cabbage
  • 2 cups grated carrots (about 2 medium)
  • 1 can cooked garbanzo beans ( 15 ounces; about 1 ½ cups), drained and rinsed
  • 1 medium red bell pepper, seeded and chopped (about 1 ½ cups)
  • 1 medium cucumber, peeled or unpeeled and sliced (about 2 cups)
  • 2 ribs celery, sliced (about ⅔ cup)
  • 3 green onions, white and green parts, thinly sliced
  • ¼ cup chopped fresh basil
  • 1 medium, ripe avocado, chopped (optional)

  • ½ cup lime juice
  • ¼ cup mustard (I like Dijon or st one ground)
  • 1 medium clove garlic
