Crunchy, slightly sweet and our new favorite side salad!

Ingredients
  • 4 slices bacon
  • 8 c. broccoli florets cut bite size
  • ¼ c. red onion, chopped
  • ¼ c. golden raisins or dried cranberries
  • ¼ c. toasted sunflower seeds
  • ½ c. chopped cilantro
  • ¼ c. dijon mustard
  • 2 T. honey
  • 1 T. balsamic vinegar
  • ½ c. Olive or Avocado oil
Steps
  1. Cook bacon, on stovetop or in the microwave. Cut cooked strips into bite size pieces.
  2. In a small bowl, combine mustard, honey, vinegar and oil. Whisk until combined.
  3. In a large bowl combine salad ingedients and drizzle dressing over.  With a rubber spatula, stir until all ingedients are mixed and covered with dressing.
Notes
  • This recipe makes a lot. It keeps well and makes an easy side dish for both lunch and dinner throughout the week.
