Spicy Black Bean Sliders with Chipotle Mayo

  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 egg
  • ½ small yellow onion, finely chopped (about ½ cup)
  • 1 small clove garlic, finely minced (about 1 teaspoon)
  • 1 cup bread crumbs
  • 2 teaspoons adobo sauce (from a can of chipotle peppers in adobo sauce)
  • 1 teaspoon dried oregano
  • ½ teaspoon cumin
  • ¼ teaspoon smoked paprika
  • ⅛ teaspoon cayenne pepper (optional)
  • ½ teaspoon kosher salt
  • ⅛ teaspoon freshly ground black pepper
  • 2 tablespoons olive oil

  • 16 slider buns or dinner rolls, sliced in half
  • 8 ounces pepper jack cheese, sliced thin
  • ½ red onion, sliced
