  • 1 cup grated carrots

  • 2 tsp baking powder
  • ¼ tsp baking soda
  • 1 tsp sea salt
  • 1.5 tsp ground cinnamon
  • ½ cup unsweetened shredded coconut, optional
  • ½ cup raw pecans or walnuts, chopped
  • ⅔ cup raisins
