Small you tiao (fried fritters) 炸油条
Ingredients
  • 300gm flour
  • 1 egg
  • 1g baking soda (¼tsp)
  • 5g baking powder  (1 ¼ tsp)
  • 15g oil
  • 2g salt (½ tsp)
  • 120ml water
Steps
  1. Mix and knead all ingredients until smooth. (Thermomix: Mix 6s /sp6. Then knead 2mins). Shape into a ball.
  2. Oil a bowl and put dough in. Covered. Leave in the fridge for 3 hours.
  3. Remove dough from bowl. Refer to the pictures.
  4. Cut dough in the middle. Shape into 2 rectangle logs. Cut into equal strips.
  5. Use a chopstick to press in the middle. Stack two strips on top of each other.
  6. Pull to elongate the strips. Cut in the middle. Pinch both ends together.
  7. Heat oil. Give the strips a pull just before dropping it into the oil. Stir the dough as you fry until it floats.
  8. Serve.
Notes
  • I find the strips shrunk after pinching them together. Pulling it before frying will make the fritters fluffy.
